Double Oklahoma Style Smash Burgers


Ingredients:


Prep:

Begin by cutting the sweet onions paper-thin. Use a mandolin or a sharp knife. Place all of the onions into a small bowl and sprinkle some salt to draw out moisture. Set aside. In another bowl, combine the mayo, ketchup, Worcestershire sauce, and diced Bread and Butter pickles to create the burger sauce. Next, form your patties by shaping the ground beef into 3oz balls, ensuring they are all equal in size.

Cooking:

Heat a skillet or cast iron pan on medium-high. Add a thin layer of high smoke point oil (Canola or Avocado) to the pan. Once it starts to smoke, turn the heat down to medium and place a clump of salted onions in the pan (slightly smaller than the patties). Place a patty on top of the onions and flatten it with a spatula. Season with salt. Flip once a hard brown crust forms, then add cheese on top and cover to melt the cheese. Remove from the pan once the cheese is fully melted.

Assembly:

Spread the burger sauce on the buns. Stack two patties with melted cheese between each bun. Serve with pickles on top or on the side.

Spicy Chicken Katsu


Ingredients:


Prep:

Sauce: Finely dice pickles, combine with mayo in a bowl, add 2 tbsp hot sauce.

Flour: Add flour, chili powder, garlic powder, and salt into a bowl.

Egg Wash: Add one egg, ¼ cup of sauce, and whisk in a bowl.

Breading: Add panko to a bowl. Mix in chili flakes until you have the desired amount of spice.

Operation: Dredge the chicken in the flour, then the egg wash, and finally the breading. Ensure that no spots are left blank.

Frying: Pour enough oil in a large pan to shallow fry. Flip the chicken until it's dark orange and brown on both sides.

Assembly: Layer the sandwich with bread, lettuce, sauce, chicken, and top with another slice of bread.
